~ WEEK 8 OF TODAY THROWS A WEDDING ~
This was a big week for Nikki and Buddy. Not only did they move in together, but they also took a day to sightsee in New York. Their whirlwind limo tour, complete with Champagne toasts and plenty of kissing, took them to these top tourist spots:
- Empire State Building
- Ferry Ride to Statue of Liberty on Ellis Island
- Ground Zero
- Horse-drawn carriage ride and street-vendor hot dogs in Central Park

The winning choice, modeled by Buddy's dad, was #2 by Kenneth Cole, a tan cotton suit, worn with a pale coral-colored shirt that matches the bridesmaids' dresses, no tie, and sandals.

The Wedding Cake
For a destination wedding, a couple has two choices according to the Today Show:
1) Contract with a baker close to home to make, freeze (yuck!), and ship the cake to its destination
2) Have the pastry chef at the resort bake the cake.
A third choice, which makes sense for destination weddings within the United States, is to contact a local bakery and have them make and deliver the cake to the reception kitchen.
Although butter cream frosting will melt quickly if a cake is displayed in a tropical location, most of the cakes the audience has to vote on features that ingredient. These are the choices:
- Cakes for Occasions - Pearls and shells design of triple-tier chocolate cake infused with espresso and covered with smooth, satin-rolled fondant.
- Elegant Cheesecake - Caribbean citrus cake with four square tiers bearing the couple's monogram on the second tier.
- Geoff & Drew's Incredible Cookies - Four-tiered tropical orchid cake with three layers of chocolate cookies and buttercream icing covering them.
- Blanchard's - Island time four-tiered, blue-tinted buttercream cake that depicts sailboats and the Anguilla beach, lounge chairs, and a Caribbean cottage on top.
